You will love the
fresh taste of artichokes and capers, a delightful twist to
your pasta salad.

Ingredients:
8 ounces bowtie pasta
8 ounces fresh mushrooms
1 roasted red pepper, (fresh or canned) diced
1 tablespoon parsley, freshly minced
1 jar Stonewall Kitchen Artichoke & Caper Relish
Olive oil
3 ounces feta or blue cheese |

Directions:
-Cook pasta according to package directions. Drain, rinse
and set aside.
-Slice fresh mushrooms and sauté in olive oil until lightly
browned.
-Add diced roasted pepper just to coat and blend flavors;
remove from heat and let cool.
-In large bowl, toss cooked pasta with sautéed vegetables,
freshly minced parsley and 1/2 to 3/4 jar of Stonewall
Kitchen Artichoke & Caper Relish. Blend well. Additional
olive oil may be added at this time.
-Crumble feta or blue cheese, add to salad and gently toss
to blend. Cover and refrigerate until ready to serve. Toss
lightly before serving and enjoy! |
