I just got back
from Sonoma and for the second year in a row a visit to
Ferrari-Carano. There are lots of new goings-on there; the
biggest is the addition of the new Alexander Valley winery
where all of their red wine is now made. It is a gravity
flow winery with all state of the art equipment emphasizing
on the less is more philosophy of wine making. They are
using whole-berry fermentation without pump-over, but
instead, a bleading off from the bottom of the tank into a
bin which is then poured over the top of the cap. The skins
are handled as gently as possible so as not to extract the
bitterness from them. The result is deeply colored red wine
of exquisite intensity of flavor and no bitter harsh
tannins.
The white wine
making facility in Dry Creek Valley is overseen by winemaker
Sarah Quider who took a few minutes out during crush to talk
about the elaborate winemaking process their dessert wine
Eldorado Gold. The ripe Sauvignon Blanc and Semillon grapes
are harvested, then sorted and placed in bins while still in
clusters. These clusters are then sprayed with Botrytis
spores and the trays are stacked in a room with 100%
humidity for several weeks where the Botrytis mold attacks
the grapes. The result is a Sauterne style wine from
California.
