The Perfect Buffalo Wing Recipe

We all had that contest in college of who can eat the most or who can eat the hottest wings. Some of us are still enjoying that phase, while others have learned to appreciate wings for the tasty versatile dish they are. However, wings can be expensive to buy in large quantities and your choices are limited to a few flavors served by the local restaurant. Why not create your own party masterpiece?

Enter homemade wings.

Why Buffalo?

The creation of a food as popular as buffalo wings will always be a center around which many legends swirl. The most prominent story is that Teressa Bellissimo invented them at Anchor Bar in Buffalo NY, in the 1960s. Another restaurant owner from Buffalo named John Young also claimed credit a few years later. Whoever is the responsible party, it’s clear that they are genius. Believe it or not, chicken wings used to be one of the least popular parts of the chicken, but now it’s one of the most popular.

Buffalo Wings vs Chicken Wings

Traditionally Buffalo wings are not breaded and hot wings are, but today the names are almost interchangeable. Others would say that Buffalo wings are deep fried, while hot wings are oven baked, but again the distinction is far from universal. If wings are going to be the center piece of the meal, for instance a Super Party, then plan on 10-15 wings a person. If they will be an appetizer amongst other dishes, plan on 5-7 wings per person.

Pick Your Sauce

These is one of the most fun parts of the recipe. You should keep in mind the level of spiciness your guests may like. If you are having a few friends over who you know well, you might be able to customize the heat of the wings to meet their tastes. However, if you are having a large group over, it is easiest to just make two or three categories like mild, medium, and hot. For personal use, the best thing is too experiment with different sauces until you find your perfect mix.

Cooking instructions

There are a few options for preparing wings. You can Fry, bake, or grill them. Personal preference is the only true barometer of the best method for preparing wings. Traditionally they were deep fried, so try this recipe from Livestrong:

  1. Rinse chicken wings and pat dry, remove tip and discard, separate each wing at the joint into 2 pieces
  2. Heat vegetable oil in a deep fryer. Set the temperature to 375 degrees Fahrenheit.
  3. Place wings in a shallow dish and pour
  4. Place 1 cup of flour into a large resealable bag and add a handful of wings. Toss well to coat
  5. Place 8 to 10 wings in the oil (completely covered) and leave for 6 to 8 minutes or until the outside of the wings are golden brown
  6. Use tongs to remove wings from the fryer place them on a paper towel. The paper towel will absorb any excess oil
  7. Place in a bowl with your sauce combination and toss until the wings are covered

You can also choose to marinate the wings before you put them in the boiler. Your sauce and marinating recipes are totally customizable depending on what flavor you desire. A common practice is to melt butter than add it to the sauce with a small amount of salt. Wisk until thoroughly mixed.
