Tasting Notes: The aroma is rich, spicy, floral and fruity with a
rejuvenating mineral and saline finish, very slightly
Pairings: Pairs with crustaceans, seafood, white meats, foie
gras, vegetables and cheeses.
Vinification: Hand-picked grapes and gravity-racking on grapes
and crushed grapes. Very light maceration at the
beginning of fermentation and draining of natural
fermentation juices in stainless steel vats and barrels
without SO2. Ageing in stainless steel vats and barrels
on lees for 18 months. Wine withdrawn and filtered
after slight sulphiting.
